Michael Balles, newly appointed head chef for Council Oak Steaks and Seafood brings his culinary expertise to Seminole Hard Rock Hotel & Casino Tampa. Having graduated from the Academy of Culinary Arts, Chef Mike started his career in the same city that he was born, Atlantic City. He held a crucial role in the opening of Bobby Flay Steak house in the Borgata Hotel & Casino. He later became the Executive Sous Chef at Marc Forgione Steakhouse where the restaurant won Best New Restaurant, Best Steakhouse, Best Dessert and Best of the Best for 2013 in New Jersey Monthly Magazine.
Chef Mike brings a whole new meaning to innovative and enthusiastic. Some of his goals are to fine tune his knowledge on Florida’s signature flavors and to make sure daily specials are what the property guests are looking for. His favorite part about being a chef at Council Oak Steaks & Seafood is that he is able to bring his creativity to the table, literally.
Chef Mike has already brought new innovative recipes and specials to Council Oak Steaks and Seafood. Two of his latest and greatest trendy dishes are the Lobster Jambalaya and the Steak Tartare, which includes Watercress Salad, Quail Egg and Sriracha Aioli.
